The culinary team would like to extend our appreciation to the membership for the capital purchases we will be receiving this year. The following is a list of what we will be doing with the capital investment in the kitchen.
Steam Kettle – we are having a 100L steam jacketed kettle installed that will enable us to batch cook our fresh house-made soup and stocks. We will also be able to reheat soup and sauce in a rapid fashion while eliminating the potential for scorched or burnt pots.
Fridges – we will be installing three, line fridges to replace three that have been breaking down consistently throughout the last year and half. This will help in product sustainability and peace of mind while we are not in the building. This also includes an additional workstation on the line.
Oven – we had a convection oven break down on us that was not repairable, so we have purchased a new convection oven to replace it. This oven we use for our daily service and banquet production and operation.
As you can imagine it gets warm in a kitchen and we had been having difficulty with the air conditioning. We will be repairing the roof top unit and including an additional unit in a different location to add more cool air flow. We will also be relocating three of our fridge compressor units to the roof which will eliminate the noise and heat that they produce in the kitchen. If you have been in the kitchen or have attended a chefs table, you may have heard the compressors. This is great news; the chefs tables next year will be much quieter, and all the colleagues will not have the constant noise.
We still have a bit of a list for capital investment and we all appreciate the support that we are given in order to make our jobs of exceeding membership expectations increasingly more manageable. Be on the look out for photos of the progress and implementation of these projects.
